Introduction

With the 98OM burrs, our goal was to produce an omni-purpose everyday-use burrs, interjected with our own interpretation. The 98OM burrs are optimized to provide an approachable and enjoyable cup: clean refined acidity supported by sweetness, and well-balanced juicy cup profile, specially to be paired with modern light roasts. The acidity is elegant and delicate, typically supported by the sweetness in the structure, thus integrating well with other flavour notes found in light roasts, enhancing the overall character of the cup without overpowering it.

How does the cup profile taste like?

In our observation, the cup characteristics and styles are very similar in both espresso and pour-over. In general, it provides a cup profile that is well-balanced, noticably sweet, juicy, clean, and exhibits good/high clarity. This, in our opinion, makes it perfect for showcasing the flavors of the coffee's terroir and processing, while providing an enjoyable cup experience.

• For espresso: As espresso burrs, the 98OM burrs provide an approachable, well-balanced, clean and sweet cup of espresso with good/high clarity. The body is moderate, on par with other 98mm burrs, and slightly higher than what you would get with most modern brew-focused big flat burrs. It also has a moderately broad sweet spot, making it relatively forgiving to dial in.

• For brewing: The 98OM burrs produce high-quality coarse grind, producing cups that are balanced, juicy (clean, refined acidity supported by sweetness), with satisfying mouthfeel and aftertaste, with little astringency. The presentation of the acidity/brightness is relatively sophisticated, clean and very enjoyable.

Who are the burrs best suited for?

If you enjoy modern light roasts or medium roasts, and prefer well-balanced and juicy cups (both espresso and brew), we believe you’ll be extremely satisfied with this burr set! Generally, the acidity is less intense, sharp, or edgy; instead, it presents the acidity in a refined and approachable manner (present, but not overpowering) and the sweetness characteristic bring forth the perception of juiciness.

What application can I use the burrs for?

The 98OM burrs are suitable as an all-purpose burr set, designed for all brew methods, including immersion brewing, pour over, moka pot and espresso.

What roast level can I use the burrs for?

The 98OM can work for all roast levels, but we optimized and evaluated the burrs mainly based on medium and light roast levels.
