Mizen 64OM: Our Interpretation of All-Purpose Burrs for 64mm Flat Burrs

Introduction

For quite a while, users have to choose between compromising either on the quality of espresso or coarse-grind brews when choosing a 64mm flat burrset, as there was no single 64mm burr (in our humble opinion based on our preference) that can work exceptionally well simultaneously across both ends of the spectrum. But now, we believe that dilemma may be a thing of the past. Our goal in creating the 64OM (abbreviated for 64mm omni-purpose) burrs was to craft an all-purpose burr set, which excels in both fine grinding (such as espresso) and coarser pour-over grinding (like V60, Kalita, Chemex, etc.), resulting in exceptional cups for all these diverse applications.

Through adjustments to the popular cast burr teeth profile and the application of a novel finishing processes, we are proud to introduce our interpretation of Omni-purpose burrs and to share that with you our fellow coffee enthusiasts.

How does the cup profile taste like?

• For espresso: When used for espresso, the 64OM burrs excel in enhancing flavor separation and bringing heightened clarity to the cup. The resulting espresso is characterized by its clean, sweet profile, accompanied by a medium-high degree of body and mouthfeel.

• For brewing:When used for coarser grinding (e.g. pour over or immersion brew), the 64OM burrs produce high-quality coarse grind that provides excellent cup profile. The grind size distribution of the 64OM burrs is slightly broader than unimodal-style burrs, but is still rather focused when compared to traditional flat burrs – this combination lends itself to achieving brewed coffee with cup characteristics that are complex, juicy, and have satisfying mouthfeel and with little astringency.
